Non-traditional Cheese Sauce

I was fascinated by Heston Blumenthall’s method for making a cheese sauce. He says it’s much smoother and silkier than one made with flour. If forms the basis of these macaroni cheese dish. Can’t wait to try it.

in the same programme he put stilton mixed with mascarpone on a chocolate digestive biscuit finished with reduced port. Have to give that a go too.
